meat, beefIngredients
3 lbs. Lean Ground Beef( I use 93% lean)
One Bell Pepper
One medium white onion
1/2 C. Quick Oats Oatmeal
2 Large Eggs
16oz. Tomatoe Sauce
1 can Stewed Tomatoes either whole or chopped.
Directions
Pre-Heat oven to 350 degrees.
Place meat large 9 x 13 pan.
De-seed the bell pepper and cut into medium sized pieces. Cut onion into quarters. Finially chop bell pepper (I use a small electric chopper.) and do the same with the onion. Pour both over the meat. Crack both eggs into meat and mix throughly with your hands. It will be lose liquidy feeling. Add oats to it 1/2 at a time until the meat starts to take a form. Now shape into a large loaf and place oven. Cook for about 2 hours until done. Once it is cooked throughly then remove from oven and pour tomatoe sauce over the top and the tomatoes. Now place back in oven for about 10 to 15 mins until sauce is hot. Remove and serve. Well feed about 6 people. Will also have left overs and it is better the next day.
This was one of my dad's favorite things to make. Is very good. I am sure you can sub turkey or ground chicken for beef I have never tried. I have also made a smaller verson of this using half the meat. It is better this way.
